Drum roll for... the new Ethiopian filter, Worka Chelbesa!

This absolutely beautiful natural Heirloom coffee has flavour notes of peach yoghurt, violets and velvety blueberry. It's from Gedeb, which is in the forested mountains of southern Ethiopia in the Yirgacheffe region.

 

So where does this coffee come from?

Worka Chelbesa is the name of the processing station this coffee is from. It takes its name from the nearby village. A processing station is a kind of hub: coffee from many different local farms is transported there to be processed and made ready to export. Work Chelbesa is currently run by SNAP Specialty Coffee -- an amazing company and social enterprise established in 2008 by Negusse Debela. 

How did we chose it?

Whenever we get in a new batch of sample coffee beans, we like to set up the cupping table at the roastery and blind taste them all. Just for fun. And also because it helps us be unbiased when choosing our new coffees, making us really focus on what we can taste and smell, without expecting anything in particular.

So when we got some samples back in November, we weren't specifically looking for a Yirgacheffe (or even an Ethiopia) -- we were just after something clean, sweet and floral.

Now, the classic Yirgacheffe flavour profile is sweet florals (think jasmine, bergamot or honesysuckle), clean bright citrus acidity, and a light body -- so maybe we shouldn't have been surprised to find ourselves picking Worka Chelbesa out of the lineup! We all absolutely loved it, and knew immediately we wanted to make it part of our filter range.

It took us a fair few goes to find the perfect roast for this coffee. We'll start by doing some very, very small batches to work out the perfect length, temperature and ratios -- but as a huge Yirgacheffe enthusiast, I think our head roaster has nailed it.

How should I make it?

Best for V60, Clever Dripper, or Kalitia, but it also works for Aeropress or cafetière. 

We use 17g of coffee to 250g of water, with a water temp of 85°C. Always used filtered water if you can!

Brew for 2:30, put your feet up, and enjoy. For cafetière, go with 4:00!
