With tasting notes of ripe peach, bright lemongrass and outstanding juiciness, this is a gorgeous white honey Gesha has undergone a 48hr fermentation with CO2 injections. It's from the Quindío region in western Colombia.
So where does this coffee come from?
Colombia is full of producers for who growing coffee is a family tradition -- Sebastián Ramírez is no different. He's a fourth generation farmer who expanded from his family farm with the El Placer Farms Project, and now works with several small farms around Huila and Quindío, focusing on sustainable coffee farming. They specialise in low-water processing methods like natural and honey, and runs mentorship programs for young coffee producers.
How did we chose it?
We've had this Gesha for a little while now, because it's absolutely stunning. It has a SCA cup score of over 90 (which, if you're not au fait with SCA scores, is really really good). When we tried it on the cupping table, it blew us away. Sebastián produces award winning coffee, is a pioneer in co-ferments, and has won a plethora of awards for outstanding coffee producing. He also supports his local dog rescue, so what's not to love?
How should I make it?
Best for V60, Clever Dripper, or Kalitia.
We used 18g of coffee to 250g of water, with a water temp of 85°C. Always used filtered water if you can!
Brew for 2:30, put your feet up, and enjoy.
