This coffee is an organic certified, fully washed lot sourced from women producers at Rwanda's Mbizi washing station, part of Gihanga Coffee Company in Kamonyi district. Situated at 2,200 meters above sea level, Mbizi is one of Rwanda's highest altitude wetmills, collaborating with over 3,000 smallholder farmers cultivating bourbon trees on 4-hectare farms. The region's mountainous terrain, volcanic soils, and favorable climate contribute to the exceptional conditions for growing Arabica coffee, with the Bourbon variety thriving in the high elevations.
Harvested during the 2023/24 season, the fully washed process involves handpicking ripe cherries, floating, hand sorting, mechanical de-pulping, and 12-18 hours of fermentation. High-pressure water washing and density-based grading follow, with subsequent drying on raised African beds for 14-21 days. Parchment coffee undergoes meticulous handpicking and turning to eliminate defects and ensure uniform drying. Quality control monitors humidity until reaching an optimal 12%, followed by parchment resting before secondary processing for export. Certified organic, this coffee is of Bourbon variety, graded RWA CA FW SC 15+, with a screen size of 15 and up, packed in 60 kg bags.
